After you wrote about your Toddy before, my cold-brew in the Aeropress experiment didn’t go so well. Just too small a vessel for that. I do have to say though, when I was in Japan a couple years ago, I almost never had coffee brewed for me. It was usually in a can (often from vending machines), and almost always “cafe au lait.” It really seemed like the Japanese just aren’t really coffee drinkers. Imagine my surprise upon reading this post. I guess I never found my way into an actual Japanese Coffee House. (My tour-guide sister is a tea person).
This really seems like the method you would come up with if you hadn’t been told about cold-brewing. It really makes sense that removing the heat immediately would stop the flavor-chain breakd-down; Just like you have to stop a coffee roast rather quickly. 
Going to have to try this out!
